Have you noticed that protein powder is being used for more than smoothies these days? Flavored protein powders are now being used in baked goods and breakfast goodies like waffles and pancakes. I love a good waffle but the carbs are no good for me first thing in the morning. I prefer a breakfast that pacts a protein punch and these fit the bill. The texture is nice even though it is a bit spongier than a typical waffle.
I use Aria soy based protein powder in vanilla. Feel free to use the type of powder than you prefer whether it be whey, soy or other vegan variety. I topped mine with a sugar-free blueberry syrup since I have been in a crazy blueberry mood lately. Experiment with other fruit if you wish. I am sure strawberries or raspberries would be delicious. Blueberry Protein Waffles (makes 1 Belgian style waffle)
Blueberry Protein Waffles (makes 1 Belgian style waffle)
2 egg whites
2 heaping scoops of vanilla protein powder
1 teaspoon baking powder
1 packet Stevia or sweetener of choice
Frozen blueberries
Splash of vanilla extract
Heat waffle maker and generously spray with baking spray. These will stick if you don't use a good coat. While waffle maker heats, beat egg whites with a whisk until they are frothy. Add the protein powder, baking powder, vanilla and sweetener. Whisk until a thick batter forms. Stir in your desired amount of frozen berries. Pour batter into the middle of the waffle iron and close lid. Cook 2 to 3 minutes are until they are brown enough to your liking. Serve with syrup. These are best served hot.
